What a great morning!  I was actually up at 7 this morning.  Getting up early makes me feel like such an old lady a grownup!

I decided not to lay around and be a complete pile most of the morning like I did yesterday so I immediately brewed up a pot of Jim’s Organic Coffee:

I found this little bag of coffee in Ft. Collins, Colorado when we went on vacation there in July.  This coffee is really good and I found out a way to make it even better.  Aromas was brewing up my favorite cup o’ joe but the other morning when I went in there to buy some, they’re no longer making it.   Uh, what?  I was excited to find a flavored coffee – plain old cinnamon – that wasn’t a fancy latte that cost $4.  The barista dude told me that all they did to flavor up their brew was add cinnamon to their grounds….oh.  Why hadn’t I ever thought of that for home?  I’m so smart sometimes.  So yesterday morning, I added cinnamon to my coffee prior to hitting the little brew button and voila!  Cinnamon coffee!  It’s gooood and gives you a flavored coffee for much less dinero than the coffee shops.  Although I’d still drink this coffee without the flavoring, it’s tasty on it’s own!

Today is also return of the smoothie aka The Green Monster.  Although mine this morning was colored a little more like a doody monster:

It’s not the bright green I usually create but whatevs, adding some coconut/pineapple juice made it really good even if the color isn’t as pretty.  Also included in the mix:

  • Blueberries
  • Strawberries
  • Frozen banana
  • Spinach
  • Scoop of Perfect Food

I also thought I’d take a pic of my little friend that greeted me this morning, Brunhilda.  She lives in my kitchen window:

She’s almost as cool as the praying mantis I posted about yesterday.  Some people would get freaked out about a spider living in their window but she’s (OK, she could be a he, who knows?) not bothering me there.  As long as she keeps her ass on that side of the glass and doesn’t come in to help me cook dinner or start asking for her cricket to be cooked medium well, our relationship will be just fine.  I actually think it’s neat to have a spider like that so close without worrying about it crawling on my face at night.  What would you do?  Kill it or let her do her (his?) thang?

I’ve finally gotten a moment to come back to this project! I’m not doing so well with consistency on this blog. I have a good excuse though, I worked both of my days off and my computer is a big piece of garbage, it takes FOREVER to even open up a web page let alone upload pictures and what not. I’m sure I can think of some more excuses but two should do for now. Also on the list of things to do is play with this layout since it’s super plain and complete an “about me” section. It’s coming, I swear.

So, breakfast today. I’ve been pretty consistent about drinking these green smoothies the husband and I came up with sometime last year. Since I wasn’t cooking much, it was a way to get some vitamins into our diets. Today’s smoothie contains fresh mango and banana. I like pineapple too but I haven’t cut it up yet. Some flaxseed, blueberry juice and yumberry juice. Never heard of yumberry? Yeah, neither had I until the husband brought it home one day. Oh yeah, I throw spinach into mine and a green powder called Perfect Food Original. I won’t go into detail but it’s got a lot of good stuff in it. We find it at Whole Foods. For this smoothie only being fruits and juice, it does a decent job of keeping me filled up until 11am and I drink it about 7:30.

Lunch today was totally inspired by this lady over here. Both of the pics shown actually. I’ve been reading her blog for a couple of weeks now and it’s very informative on products she’s tried and there are some really good recipes. The stuffed zucchini I had today is one of my new favorites! The lighting doesn’t do it justice. I truly work in hell. Cubicle hell. But lunch was good, trust.

I also had some cauliflower and broccolli that would probably go bad before I could eat it all, so I made some mashed broccolli and cauliflower. I’d had the mashed cauliflower at Ruby Tuesdays before and really liked it. It doesn’t look very appealing but it’s pretty decent. Next time I will throw in some sweet potato or even a plain potato. Hopefully that might make it thicken up.

Around 1:30 or so almost everyday I get sugar cravings. Today I had a cup of yogi tea with Stevia and a clementine that has seen better days. It still tasted good though and took the edge off of the chocolate craving. I hear the swine flu may have landed in Omaha? Might as well strengthen up the ‘ol immune system with some citrus.

So for a snack when I got home I had one of my favorites. Toast with almond butter, banana and honey. I picked up the multi-grain bread at Panera yesterday and it’s really good. Oh yeah, and a glass of organic skim milk. The hubby and I love, love, love milk and go through about 2 gallons a week. No, we do not have kids. If I get osteoporosis when I’m 80, I’m gonna be pissed.

I am hoping to make it to the gym this evening. I still have to run to the mall and I have tons of cleaning and laundry to do since I didn’t have a day off so if time gets short, I’ll just be going for a run as that cuts out a lot of drive time. I’ve been doing really well with the running recently (well, I’m still slow as hell) but at least I’ve been going. Once I fill out an “about me” section, there will be a more clear definition of my goals and how very far I still have to go.
Good night for now, I’m off to the mall, lighting store, etc!
