Dream Car October 14, 2009

The weather today has been dreary and cold but the day brightened up a little bit when I saw this driving down the road:

I love, love, love, love, LOVE Volkswagons, old ones and new ones alike. And just look at this one! It’s pink! With flower hubcaps! I know it’s the car that tops the list of most 14-year old girls that wish they could drive but I adore it! When the bugs first came out (I think in 1998?), I wanted one like I’d never wanted a car before. I did finally lease one in 2001, a bright green turbo one. I loved that car so much, I wanted to cry when I had to give it back. Since then, I really haven’t cared much about what I drive, no car compares to how much I love bugs. If I won the lottery, I’d walk past the Mercedes and Porches and get me one of these. Oh well, *sigh*…on to food….
Breakfast this morning was an Erin Baker’s cookie, the Pumpkin Spice flavor is back, yet another good thing about today!

Mid-morning snack, a banana:

Lunch was a half an apple pie Larabar and a big a$$ salad with:
- Spinach and Spring Mix lettuce
- Mushrooms
- Tomato
- Red Onion
- Blue cheese crumbles
- Sunflower seeds
- Dried cranberries
- Garbanzo beans
- Italian dressing

I did not have an afternoon snack, weird right? I just didn’t have time. I ran home after work to let the dogs out then had to mail some stuff, change my oil and get over to the 24-hr fitness that I’m thinking of joining. Well, I’m going to join now that I’ve checked out the facilities and tried out their spinning class. It was a great class! Now that’s it’s getting cold out, it’s time to start working out indoors again
I have a membership at another gym now and love the cycling class there, but am looking for something with more classes and yoga. Oh, and the pool will be nice too. I’m not much of a swimmer but it is a great workout should I ever think to use it. What really sucks about going to the gym is that it’s at least a 20 minute drive depending on the traffic. We do not have a decent gym in my town so I have to drive over to Omaha. But the nice thing is is that my work pays for it, so I may have to dish out gas money but I don’t have a membership fee or monthly dues!
Needless to say, after the hour long cycling class, I was STARVING! I came home and tore up a few crackers and hummus:

Sabra is the best! I could eat the whole container with a spoon…and I take pride in exercising restraint in not downing a container in one sitting. This container has been in the fridge for a couple of days now! By the way, I went to the store yesterday and didn’t see any. As in, they aren’t stocking it anymore! I will need to clarify this with someone as I cannot find it anywhere else in town but Wal-Mart and Wal-Mart only stocks two flavors. Well, so did the store I shop at now, but I hate having to make a special trip. My store needs to look into stocking more flavors of Sabra, not taking it off the shelves!
After eating the above snack, I really wasn’t hungry. I threw some chicken parmesan together for the husband but since I don’t eat chicken, my options were limited as I really didn’t feel like cooking up anything else. So I just put some brussel sprouts in the oven along with the husband’s chicken:
My favorite part is the little burned leaves…is that strange?

I tossed these with some olive oil, cayenne pepper and some veggie seasoning I’d picked up at the farmer’s market a while back:

And here’s the chicken parmesan. It’s really quick and easy. I just dipped a couple of chicken breasts in egg and coated them with bread crumbs and pasta sauce. I put ‘em in the oven at 375 for 20 minutes, put on a little more sauce, baked them 10 more minutes and then put on some parmesan cheese for the last 5 minutes of baking.

Sooo, anyone else a fan of VWs? If not, what’s your dream car?

Due to Jay Leno airing at 9 o’clock last night, I didn’t post yesterday’s eats last night like I should have. I don’t usually watch Leno but wanted to see what all the hooplah was about with the new time slot and all. And dang, Leno! Making Kanye cry like that! Glad I tuned in, though I doubt I could care less that he hurt poor wittle Taylor Swift’s feelings. She should go back to CMT anyway. I’m not a big Kanye fan and he totally pulled a dick move at the VMAs, but look at all the publicity he’s gotten. No publicity is bad, right?
Prior to all the TV excitement, here’s what I ate:
Breakfast was a green smoothie that contained:
- Spinach
- Pineapple
- Frozen banana
- Blueberries
- Yumberry juice
- Pineapple/coconut juice
- Flaxseed
- Scoop of Perfect food

Lucky me, I had to take my dad to the doctor for eye surgery for cataracts. I knew I’d be waiting a while so I brought 50 Secrets of the World’s Oldest Living People (here is a review I found) to read and the Tropical Fruit Larabar I hadn’t tried yet.

I particularly liked the section that says to “Have a Glass of Red Wine with Dinner”
Tropical Fruit Tart Larabar verdict? Eh, it was OK. My favorite is still Apple Pie. The Tropical Fruit one was heavy on the pineapple and while I love fresh pineapple, I guess I just didn’t love it in this form.
After dad had his eye surgery, he wanted to grab something to eat since he hadn’t eaten since the previous evening. The guy loves Village Inn for some reason (probably because he’s old) so that’s where we stopped. I only like Village Inn when it’s 2am and I’ve done shut down the bars and need some flapjacks buuut I haven’t done that in a while so I humored him and had a late lunch with him. I found something halfway healthy. A pita wrap with:
- Eggs
- Avocado
- Tomatoes (not very good ones)
- Spinach
- Swiss cheese

It was supposed to come with bacon but I had them omit that and I ate about half of the hashbrowns that came with it.
I didn’t get home until almost 8pm after dropping off my dad and listening to him yap for a while so dinner was quick and easy. Todd had some leftover hot wings from the other night so I had free reign on what to make for myself. I had some quinoa already cooked so I just roasted some brussel sprouts, broccoli and asparagus and mixed it in. I added in some fresh from the garden cherry tomatoes, some blackberry balsamic vinegar and leftover baked tempeh from Saturday and dinner was done.

Because I was with my dad ALL. DAY. LONG. yesterday, I did not get my 9-mile run in so I’m off to do that now. I’ll leave you with a picture I took last night. While driving home from my dad’s, I actually paid a little attention to the sky and saw how pretty the sunset was. I drove to a lookout point right by my house to get a pic. It’s rare that I take a minute to take in my surroundings and I’m glad I did last night. It’s scenes like this that truly make me feel tiny in this big ‘ol universe.
My little Fujifilm doesn’t do this sunset justice but you get the idea.

Whew! Watch out y’all, TWO posts in one day! This never happens!
I’ve actually eaten pretty decent today, except there isn’t much (anything at all really) for veggies. By decent I mean I didn’t shovel a bunch of crap into my mouth today. Breakfast this morning was an egg sammich with egg, a slice of chipotle cheddar cheese, and some fakin’ bacon all smooshed up between an oroweat thin.

By the way, these sandwich thins are the bomb! I’ve seen them around some blogs but have been unable to find them in my area. Finally! I found them last week and they rock!
After breakfast and lounging around for a while, I got busy and cleaned some house. Pretty exciting, I know. I skipped lunch since I really wasn’t hungry (uh, shocker!) and went for a Larabar snack prior to my 3-mile run in the late afternoon. I hadn’t tried this PB&J flavor before but as with all the other flavors I’ve had, it was really good. Not quite as good as the real thing, but pretty dang good.

After my run, which went really well, I came home to make some dinner. For some immediate hunger satisfaction though, I had a little appetizer:

I had to break into my newest stash of Sabra and try out these Cheddar Pita Chips – also a new favorite! What a great Monday, I’ve found TWO new food faves, sandwich thins and these pita chips!
The chips and hummus quelled my hunger enough to wait for dinner of which was a tried and true favorite of mine: coconut salmon with pineapple salsa. I know I’m not too consistent with posting and when I do, it looks like this is all I eat! It really isn’t I swear. Although it’s so good, I could eat it everyday!

Truth be told, this is an old pic, but it looks the same every time I make it. I baked up some asparagus on the side and also tried these little Thai eggplants:

Now, I’m a lover of almost all veggies. I’ve even made peace with beets, frozen spinach and sweet potatoes, all things I despised in my younger years. But these things are gross. I tried them raw and they were gross. Then I thought baking them might make them better. That didn’t work either. They’re very bitter – worse than bitter beer face bitter. My only other idea is to deep fat fry them and cover them in chocolate because really, anything is better when it’s deep fried and covered in a chocolate. Although this mentality could be why my booty is bigger than J-lo’s…still working on that.
