Where to start? What a fitness filled weekend I had! One that included my goal of completing my first half marathon. Let me start with Saturday…
About a month ago, my best friend signed us up for the Urban Adventure Omaha race, the 1st of it’s kind in our city. We had no idea what to expect as teams don’t really get details about what to do until the day of the race. Saturday morning came and after a night of thunderstorms, the morning was pretty gloomy. I met my team (my friend and her boyfriend) at their house at 7:15. On the way I stopped for a totally nutritious breakfast, an egg and cheese mcmuffin:

After arriving at their house, I realized I had forgotten my helmet and without it, I wouldn’t be able to participate. I was panicking! I had left it by my pack and totally forgot to grab it! After a phone call to the husband, he met us at the lake plenty of time before we started. What a good husband!
For not knowing what to expect, this race turned out to be tons of fun! If there is one like it in your area, you should definitely sign up! We started out biking from Carter Lake to downtown Omaha where we had various checkpoints to mark off of our card that had us running through downtown. Different check in points would give us other instructions on where to go next. It even involved a water slide (FUN!) and ending with “kayaking” in Carter Lake after biking back there from downtown. Kayaking involved an inner tube and kayak paddle, yeah we got soaked. It was awesome though! I will definitely sign up for this again next year!
Saturday night I took it easy. No wild bar nights since the CB half started at 7am. We spent time with the husband’s family since it was our niece’s 10th birthday. Of which we did not get her the cell phone she wanted. Instead she got a Nintendo DS game and a Miley Cyrus book. 10 year olds wanting cell phones, I feel so old! I did have this to eat since the husband heard quinoa was good to eat before a race.

Sunday morning involved more dark skies and I really hoped it wouldn’t rain for my first race. Unfortunately, my wish was not granted and right after the gun went off, it started raining. And not just sprinkling, a nice steady rain that soaked everyone. My nice, new shoes really took a beating and I think my Nike+ bit the dust. Here’s some pre-race fuel and I think it was the perfect amount to eat before running. I ate it two hours prior to the start. Wheat bagel with PB, banana and honey:

The race went great though besides the rain! I was really worried since the longest run I’d done was 10 miles and I’d never run in inclement weather before. I felt great, stopping at mile 6 with my friend I was running it with to have a Clif gel and some water. We walked for about a minute and I ran with her until about mile 9. I didn’t want to stop any more as it’s hard for me to get going again. After stopping, the pain has a minute to catch up so it’s easier to just keep on keepin’ on. And I was really hoping to make a time of 2:10:00. About mile 11 is where I started to get pretty tired. My shoulders hurt, my ankles hurt and I wanted to stop but I pressed on and finished really strong. When one of the volunteers said we only had .25 of a mile left, I thanked the sweet baby Jesus and sped up, excited to be done! Although I didn’t make the 2 hour 10 minute time, I a. did not puke and b. did not finish last. I finished with a time of 2:12:13 and ranked 364 out of 566 finishers. For just starting to get into running this year and not really following a training program until a month before the race, I’m pretty happy with the result.
Post race, Todd suggested we go eat at my favorite restaurant in town, McFosters. First, I had to shower and comb through this mess:

Gross right? I really need to start braiding my hair before running. It was a tangled ball! After tackling that mess we headed to Omaha and McFosters was awesome, as always. It’s the only place in town that offers mostly vegetarian and vegan options. I had a cup of coffee to warm up with:

Todd thought some wheatgrass shots would be an appropriate way to toast my success. As a sidenote, we’re thinking of trying to grow this stuff ourselves since it’s just grass and should be easy. And it’s really good for you. 10 years ago I never would have dreamed of drinking grass. Smoking it maybe, but drinking it?

And for breakfast, I ordered the omelet with mustard greens and Thai curry sauce. The hashbrowns are vegan so they weren’t loaded down with a bunch of butter. It was really good and look! They throw little edible flowers on it to make it pretty:

You can bet I ate it all, I was so hungry when we got there I thought I might gnaw on the edge of the table. After the race I had snagged an apple and Todd grabbed a powerbar for me but that barely quieted down the hungry beast in my stomach.
I suppose this post is long enough but I can’t say enough how awesome it was to complete that distance and I’m excited to sign up for another one. I’m off now to meet some friends for lunch at…McFoster’s! Twice in one week!

Wow! I haven’t posted in FIVE days! I’ve just been that busy…training for the HALF MARATHON I just signed up for this evening! I’ve been talking about it, but now it’s real. I paid 60 bucks and everything so there is no backing out. Oh, I’m scared for sure! I do think it will be neat to participate in the first ever organized race like this in Council Bluffs. There are over 500 people signed up for the half so hopefully I’m not in last place!
For breakfast this morning, no smoothie
I grabbed an EAS shake out of the fridge on my way out the door. With that and a banana, I was actually good to go until lunchtime which was at eleven.
Lunch today was leftovers but OMG it’s my new favorite thing to make! Coconut Crusted Salmon with Salsa is sooo emmer effing good you’ll want to slap your mama. And it’s so easy! For someone like me, that is a definite bonus! And I love salmon and coconut, I never thought to add the two together. Go check out the website where I found it, Mr. Zesty Cook can put together some food fo sho! I had this over brown rice but I usually like to put it over quinoa.

Sorry for the blurry pic as I still use my phone most of the time. I still haven’t mustered up the ballz to whip out my camera at work and restaurants and with the iphone, I can load my pics directly to photobucket which is how I get pics on here. I’m sure there is an easier way to load pics to wordpress, but I’ve yet to take a couple hours and really acquaint myself with this blogging thing yet. So until then…

The afternoon involved more than one snack, unfortunately, I fell off the wagon today and let the sweet tooth take over! Someone retired at work today so of course there was cake:

And I had to eat this yogurt before I let it sit in the fridge any longer and expire. I think I’ve found my new favorite yogurt! I’ve been searching for one that isn’t a yoplait or dannon and I’ve found it! Behold the Wallaby Orange Passionfruit (not made with real wallaby, gross). It’s not too thick and doesn’t have any funky curdled chunks in it like some other yogurts I’ve tried. It’s really good!

Oh yeah, and I had this but it’s not really a snack right? I shall consider it a supplement:
On a crappy note, my moms is in the hospital. She’s got some problems with her circulation and blood flow to the lower half of her body. They’ve run a bunch of tests and she should be released tomorrow. So, after visiting her today, I ran home and did yard work. Our yard looked like Costa Rica, seriously. Jungleland! I was expecting a monkey to come flying at me! The days it works out to mow the grass it rains! On the nice days, there just hasn’t been time and husband has been slackin’ (OK, he’s been working on the kitchen, pics of the remodel to come) but anyway, neither one of us has made the time to do it. After cutting my way through the grass and cursing the husband for slacking on his husbandly duties, I went for a 3 mile run. By this time it’s 8:30 and I’m starving. So, for something quick, I made pizza. The pizza included:
- Pesto
- Tomato sauce (good ‘ol Ragu)
- Mushrooms – baby bella
- Banana peppers
- Greek olives
- Mustard greens
- Garbanzo beans
- Green onions
- Cheese, of course

I’d never put garbanzo beans on a pizza before but I had some in the fridge to use up. It’s a win/win situation, they were really good on the pizza and I got to use up some beans!

Oh yeah, and a glass of milk…I know, my Shrek glasses rock.

And since I hadn’t had much of anything for veggies, I had a carrot and a piece of celery dipped in something almost better than chocolate. Well, I don’t dip veggies in chocolate, but I could eat a whole container of hummus like I could a whole bag of snickers!

Since this post isn’t long enough and I wouldn’t want to leave anything out, I finished off the last piece of Todd’s grandma’s chocolate cake. Really, one piece of cake today just wasn’t enough. Grandma’s cake is the bomb diggity though, the woman is like a keebler elf, baking up magic in her kitchen. This pic does it no justice, this is my favorite chocolate cake in the entire world!

Ok, almost done here…how about a workout song? It is workout song Wednesday. I’ve had this on my ipod for forevah and it never gets cut when I add and delete music from my little workout nano. It’s just got a great beat for running.

I swear I’m losing my mind! I’m even more scatterbrained than Lindsey Lohan on crack! I go to my purse to look for my phone to upload the pics I took today of food and can’t. find. it. anywhere. I dump out my purse. I dump out the bag I carry to work. I search my car and even call my co-worker to check a couple of desks at work. It’s nowhere to be found and now I’m freaking out. I envision myself leaving it on top of the car while putting my stuff in the backseat and driving off. It’s not even the fact that it’s a $400 phone (well, now iphones are $200, I think). It’s that ALL of my contacts, notes, calendar, etc. is in there! I was just getting ready to drive back to work to check the parking lot and I find it sitting right here on the desk by the computer. People, I just took a picture of food with it! I was just sitting right by it! Meaning I’ve just used it within the past 20 minutes. What is wrong with me, seriously? I’m amazed I can find my way home sometimes.
OK, so now that the phone is found, on to some serious bus-nass, food. Last night I actually cooked! I know, weird, right? I picked up a salmon, feta and spinach burger from Whole Foods and picked up some Buffalo Blue Cheese Chicken Burgers for Todd (BTW, they look and smell awesome, makes me wish I ate chicken!) but my salmon burger was the bomb.com seriously. I just pan fried it as per the meat counter guy’s instruction:

I also made sweet potato fries with banana ketchup. I know, sounds gross but it’s really good, even the husband likes it. I got the idea of banana ketchup from my favorite restaurant here in Omaha, McFoster’s. This restaurant is unlike any other in Omaha and it is so awesome. OMGsmackyomama good food. They just serve some different stuff, like banana ketchup. Considering Omaha has more restaurants per capita than anywhere else, you’d think there’d be more places with a menu that serves mainly vegetarian fare. But there really isn’t anywhere else you can get some sort of tempeh dish. There are plenty of steakhouses though! Anyway, regarding the ketchup, I just mixed in some banana flavoring with some ketchup. I didn’t measure it out or anything but it goes really well with sweet potatoes. Here is all of last night’s meal:

I also threw some broccoli and homemade chipotle hummus on there since I’m really trying to eat more veggies. Oh, and milk to drink. Yes, it’s in a Shrek glass. My husband LOVES Shrek. Weird you might say? Maybe, especially since we don’t have any kids. He ate at McDonald’s every week just to get a full set of those stupid glasses. I won’t lie though, I really like the movies too.
I’m really surprised to say that’s about all I had to eat yesterday. I had a green smoothie for breakfast and half a chocolate chip kid’s Clif Z bar. Oh they’re my favorite! They taste like chocolate chip cookies! Well, for the most part.
Well, I should wrap this up. I’m off to visit my padre (oh yay!) and then to the gym for some cardio. I’m taking the day off from running as it’s a “cross training” day on my little schedule my friend mapped out for me. She is already signed up for the CB Half and I’m still debating. I’m still pretty new to running and haven’t run anything over 5 miles. I guess the worst that happens is I’ll have to walk some of it. I really need to just commit to something and quit putting it off but 13 miles is scary!
