Happy Friday! I’m sad to say that I did not go to the gym this morning :( . The bike geek husband and I went to see Race Across the Sky last night. Unlike most biking related events, I wasn’t surrounded by spandex, sweat and packets of Gu That was a nice change. Don’t let me fool you though, I love going to Todd’s races and enjoy mountain biking myself.

The movie we saw (of which we scored free tix from the bike shop Todd rides for woot!) was interesting, inspiring and motivating. It’s all about the Leadville 100 which is a mountain bike race held in Leadville, CO. It looks to be like the equivalent of an Ironman in the mountain biking world. All the hype around this race is that it’s being touted as the ride that brought Lance out of retirement last year. And watching him race this was just amazing. The dude is a machine! Intermixed in there are some stories of other riders and the grueling specifics of the race. Unfortunately, if you want to see it, it was only showing last night. If enough interest is sparked though, I think it will be released with more showtimes.

Todd really hopes to get selected in the lottery for this so I’m keeping my fingers crossed fo him! Even if I do think he’s nuts!

Prior to the movie, we stopped at Ruby Tuesdays for a quick dinner. Sorry for the blurry photos, I’ve used my camera phone the past two days.

Breakfast this morning was a green smoothie – I haven’t had one in a while!

I also had half of a pumpkin spice breakfast cookie mid-morning.

Lunch was a salad with spinach, onion, blue cheese crumbles, kalamata olives, carrots, ‘shrooms, almonds and dried cranberries along with some veggie soup and whole grain baquette from Panera.

I better wrap this up and get some work done. Off to the gym after work! Have a great rest if the Friday!

Dream Car October 14, 2009

The weather today has been dreary and cold but the day brightened up a little bit when I saw this driving down the road:

I love, love, love, love, LOVE Volkswagons, old ones and new ones alike.  And just look at this one!  It’s pink!  With flower hubcaps!  I know it’s the car that tops the list of most 14-year old girls that wish they could drive but I adore it!   When the bugs first came out (I think in 1998?), I wanted one like I’d never wanted a car before.  I did finally lease one in 2001, a bright green turbo one.  I loved that car so much, I wanted to cry when I had to give it back.  Since then, I really haven’t cared much about what I drive, no car compares to how much I love bugs.  If I won the lottery, I’d walk past the Mercedes and Porches and get me one of these.  Oh well, *sigh*…on to food….

Breakfast this morning was an Erin Baker’s cookie, the Pumpkin Spice flavor is back, yet another good thing about today!

Lunch was a half an apple pie Larabar and a big a$$ salad with:

  • Spinach and Spring Mix lettuce
  • Mushrooms
  • Tomato
  • Red Onion
  • Blue cheese crumbles
  • Sunflower seeds
  • Dried cranberries
  • Garbanzo beans
  • Italian dressing

I did not have an afternoon snack, weird right?  I just didn’t have time.  I ran home after work to let the dogs out then had to mail some stuff, change my oil and get over to the 24-hr fitness that I’m thinking of joining.  Well, I’m going to join now that I’ve checked out the facilities and tried out their spinning class.  It was a great class!  Now that’s it’s getting cold out, it’s time to start working out indoors again :(   I have a membership at another gym now and love the cycling class there, but am looking for something with more classes and yoga.  Oh, and the pool will be nice too.  I’m not much of a swimmer but it is a great workout should I ever think to use it.  What really sucks about going to the gym is that it’s at least a 20 minute drive depending on the traffic.  We do not have a decent gym in my town so I have to drive over to Omaha.  But the nice thing is is that my work pays for it, so I may have to dish out gas money but I don’t have a membership fee or monthly dues!

Needless to say, after the hour long cycling class, I was STARVING!  I came home and tore up a few crackers and hummus:

Sabra is the best!  I could eat the whole container with a spoon…and I take pride in exercising restraint in not downing a container in one sitting.  This container has been in the fridge for a couple of days now!  By the way, I went to the store yesterday and didn’t see any.  As in, they aren’t stocking it anymore!  I will need to clarify this with someone as I cannot find it anywhere else in town but Wal-Mart and Wal-Mart only stocks two flavors.  Well, so did the store I shop at now, but I hate having to make a special trip.  My store needs to look into stocking more flavors of Sabra, not taking it off the shelves!

After eating the above snack, I really wasn’t hungry.  I threw some chicken parmesan together for the husband but since I don’t eat chicken, my options were limited as I really didn’t feel like cooking up anything else.  So I just put some brussel sprouts in the oven along with the husband’s chicken:

I tossed these with some olive oil, cayenne pepper and some veggie seasoning I’d picked up at the farmer’s market a while back:

And here’s the chicken parmesan.  It’s really quick and easy.  I just dipped a couple of chicken breasts in egg and coated them with bread crumbs and pasta sauce.  I put ‘em in the oven at 375 for 20 minutes, put on a little more sauce, baked them 10 more minutes and then put on some parmesan cheese for the last 5 minutes of baking.

Hidy ho!  Today was a work day (woot woot) so I have not yet gotten a work out in.  Unfortunately, I may not get one in today since I’m heading over to the in-laws here in a few minutes for my father-in-laws 60th birthday BBQ.  I have a 9-miler scheduled for tomorrow though so it’s probably ok to take today off. 

Breakfast this morning was the same old, same old, an Erin Baker’s cookie.  I was catching up on some blog reading and was inspired by Iowa Girl   (congrats on the nephew!) to try making my own so maybe tomorrow I’ll have something different?

Lunch today was something a little new.  I’d never had baked tempeh before so last night, I marinated some multi-grain tempeh in Italian dressing and baked it to use in a wrap today.  The flat-out wrap also consisted of spinach, tomato, red onion, cucumber SLIMcado and sabra hummus.  Mmmmm…..sabra….I haven’t met a flavor I didn’t like!

I’d never had a slimcado before but saw it at the grocery store last week, googled it real quick and saw it was a lower fat/calorie version of the avocado.  I figured it wouldn’t hurt to try so into the cart it went.  Here’s what it looks like though it’s not as pretty as when I first bought it.  Actually, it’s not very pretty it all.  It was an even, bright green about 5 days ago.

Though the outside wasn’t pretty, the inside of it was fine.  Verdict on taste?  Meh.  It’s alright.  I don’t like the texture of just plain slices of avocado and can only eat avocado when it’s mixed in with things like salads, wraps, guacamole and chips, etc so I don’t really eat it on it’s own.  This tasted like avocado, just a watered down version.  I think I’ll stick with the regular full fat version (hey, it’s good for the heart, right?).  I’ll buy this again if they go on sale or something though.

I’m in the process of baking up some cheesy potatoes for the BBQ so I’d better go.  If they go over well, I’ll share the recipe.  See you after dinner!

Saturday Night’s Alright September 12, 2009

Don’t ask me why but Elton John’s “Saturday Night’s Alright (For Fighting)” song has been stuck in my head all evening!

And so here it is, Saturday night and I’m sitting at home.  Life truly doesn’t get more exciting than this!  When did I get old again?  Goodbye to the days of fussing over hair and the right outfit, deciding which bar to go to and after hours parties until 4am and hello to playing on the computer on the weekend!

Enough complaining about my social life, or lack thereof, really, I could have gone out but sometimes it’s nice to just chill.  Aaaand I’m kinda lazy!  Let’s get on to some food, eh?

Breakfast was with Erin Baker again.  You’d expect nothing less, right?

Lunch today was not the healthiest choice I could have made, but I’ve been wanting to try out these enchiladas that are at the Farmer’s Market.  Every Saturday, my co-worker and I walk up and check out the goods since the market is just a block away from my work.  She loves them and seeing as how they offer plain cheese (since I don’t eat chicken or beef), I thought I’d try one today.

I nabbed some lettuce and jalapenos from the cafeteria but it’s too bad they didn’t have any sour cream!  These enchiladas were OK, but truthfully, I think mine are better.  Maybe something to make for next week since I have some Boca crumbles to use up.

Also from the Farmer’s Market is my new favorite drink, a vanilla chai from a little coffee stand that is there every Saturday.  The mix they use is called Big Train and it’s highly addictive.  They must blend in some crack or something.  I order this on ice and it’s gone in 2 minutes!  And they serve little 8oz. cups for $3.50!  I’m going to order some of my own mix and hopefully save a buck or twenty.

After work today I had another 5 mile run scheduled and I did slightly better than Wednesday’s run.

Hey, it’s better than my normal 10 min/mile pace, I’ll take it!  After the run, I headed home and the Husband decided he wanted to make himself some wings tonight…weird, since the guy NEVER cooks.  He found a recipe in last week’s People magazine and loosely based his sauce on that since he couldn’t find everything at our grocery store.  His improvisation worked though, the sauce had a really good flavor!  He was nice enough to pick up some Quorn Chik’n Nuggets for me…not anywhere near the same thing as some chicken wings but along with the corn and quinoa I made, an all around decent dinner.  I think Quorn nuggets taste close to real chicken nuggets but the Husband just laughs at me and asks how long it’s been since I’ve had real nuggets.  Whatevs, they’re good, try ‘em out.

And that’s it for today’s excitement.  I think I may go get real crazy, jump in bed and……read a book. 

Oh, to go back to earlier, anyone else like Elton John?  I never used to but the Husband bought one of his greatest hits CDs a while back (ok, years ago before God Steve Jobs invented Itunes) and I realized I liked more songs of his than I thought.  “Your Song” is kind of the Husband’s and my song.  I also hear he puts on a phenomenal concert.  Elton John, that is, not my husband.  OK, good night!
