Whew!  Watch out y’all, TWO posts in one day!  This never happens! 

I’ve actually eaten pretty decent today, except there isn’t much (anything at all really) for veggies.  By decent I mean I didn’t shovel a bunch of crap into my mouth today.  Breakfast this morning was an egg sammich with egg, a slice of chipotle cheddar cheese, and some fakin’ bacon all smooshed up between an oroweat thin.

By the way, these sandwich thins are the bomb!  I’ve seen them around some blogs but have been unable to find them in my area.  Finally!  I found them last week and they rock!

After breakfast and lounging around for a while, I got busy and cleaned some house.  Pretty exciting, I know.  I skipped lunch since I really wasn’t hungry (uh, shocker!) and went for a Larabar snack prior to my 3-mile run in the late afternoon. I hadn’t tried this PB&J flavor before but as with all the other flavors I’ve had, it was really good.  Not quite as good as the real thing, but pretty dang good.

After my run, which went really well, I came home to make some dinner.  For some immediate hunger satisfaction though, I had a little appetizer:

I had to break into my newest stash of Sabra and try out these Cheddar Pita Chips – also a new favorite!  What a great Monday, I’ve found TWO new food faves, sandwich thins and these pita chips!

The chips and hummus quelled my hunger enough to wait for dinner of which was a tried and true favorite of mine: coconut salmon with pineapple salsa.  I know I’m not too consistent with posting and when I do, it looks like this is all I eat!  It really isn’t I swear.  Although it’s so good, I could eat it everyday!

Truth be told, this is an old pic, but it looks the same every time I make it.  I baked up some asparagus on the side and also tried these little Thai eggplants:

Now, I’m a lover of almost all veggies.  I’ve even made peace with beets, frozen spinach and sweet potatoes, all things I despised in my younger years.  But these things are gross.  I tried them raw and they were gross.  Then I thought baking them might make them better.  That didn’t work either.  They’re very bitter – worse than bitter beer face bitter.  My only other idea is to deep fat fry them and cover them in chocolate because really, anything is better when it’s deep fried and covered in a chocolate.  Although this mentality could be why my booty is bigger than J-lo’s…still working on that.

I got some of the things done I had on my list of things to do yesterday.  Except go to Whole Foods, which sucks.  I’m a little geeky about grocery stores and love to grocery shop!  At least the husband and I don’t eat out nearly as often as we used to.  Anyway, I digress…

Sam’s Club was on the list of places to stop yesterday and lookit what I scored!

THREE Pounds of cherries!  And considering the husband doesn’t eat them, you’ll be seeing plenty of these this week!  Surprisingly enough, Sam’s sometimes has some really good produce. 

After running around all afternoon, I decided to hit up the spinning class at the gym.  I really need to get my ass on a regular bike and hit some hills (RAGBRAI is soo close!) but it was ungawdly hot out yesterday.  As my friend said on facebook it was “hotter than a 3-peckered billy goat!”  So I thought a cycling class in air conditioning would substitute nicely.  It was a great class too which I was happy about since my 3-mile run that morning could have been better.  Before class, I came home and was starving!  I tore up some chips and salsa:

Vegan Oatmeal Chocolate Chip Cookies.  OK, so I usually don’t buy this stuff as I have absolutely no willpower.  Especially when it comes to sweet stuff.  Well, I do like ice cream, but can usually resist inhaling a container.  When it comes to cookies and/or brownies, fuhgeddaboudit.  But I a) went to the grocery store hungry and b) have never ever had vegan cookies.  Now, while I am a recovering vegetarian (I eat fish, but no meat, chicken or pork), when I didn’t eat any meat products, I bounced around the idea of going vegan.  I never took the plunge but it still interests me.  Sometimes.  Anyway, I saw these cookies and wanted to try them.  Lemme tell you, they are really good!  I’m not much of a baker but I’m now inspired to possibly find a good vegan recipe that I can try.  I’d like to show some of my family/friends that eating something without animal products isn’t always a bad thing.  When I didn’t eat any meat they thought it was just the strangest thing.  Eh, we’re from Iowa, pork is a staple in the diets around here!

By the way, I managed to only eat TWO of these yesterday, but at 140 calories per cookie, I’m glad I worked out twice!

Speaking of meat, that was the star of last night’s dinner.  My very favorite, Coconut Crusted Salmon.  Seriously, it’s so good and so easy to make.  I could probably eat it 5x a week!  I serve mine over quinoa and the nutty flavor of quinoa really goes well with the coconut and pineapple flavor.  I’ve also had it over rice, but quinoa is better, trust.  You also have to make the pineapple salsa.  That’s part of what makes it so incredibly awesome.  Along with the salmon, I baked up some asparagus and had a little spinach salad with some blue cheese crumbles, sunflower seeds and 365 brand Italian dressing.  Oh, and a glass of skim milk.

Yuuuummmm, so good!  Now I’m off to attempt a 5-mile run, woo hoo!  I’ll post later with today’s eats, ‘cuz really, this post is long enough!
